6 lbs. Pale Malt Extract
1 - 2 lbs. Mountain Flower Honey (add late in boil)
1/2 lb. Crystal 40L
1/2 lb. Cara-Munich grain
1/2 lb. Biscuit grain
1/2 lb. Cara-Pils grain
1/4 lb. Chocolate grain

1 oz. Kent Golding hops (boil)
1 oz. Kent Golding hops (end of boil)

Burton -or- English Ale Yeast
|
| INSTRUCTIONS: |
1. Steep grains in mesh bag placed into 2 gallons of water while heating to boiling.
2. Remove grains and add malt extract. Stir to completely dissolve.
3. Add 1 oz. Kent Golding hops and begin timing a 30 minute boil.
Simmer, stirring frequently to avoid scorching.
4. With 10 minutes remaining in the 30 minute boil, add Honey.
5. In the last 2 - 3 minutes of the 30 minute boil, add the remaining Kent Golding hops.
6. Cool to 70 - 75 degrees F before adding the chosen yeast.
