"Bob's" Killer Honey Red

 GRAINS/MALT  HOPS  YEAST/EXTRAS
7 lbs. Pale Malt Extract
3 lbs. Mountain Flower Honey (our In-House honey) (added late in boil)*
1 lb. Cara Munich grain
6 ozs. Chocolate grain
3 ozs. Roasted Barle
1/2 oz. Northern Brewer hops (boil)
1/2 oz. Cascade hops (mid-late boil)
2 ozs. Willamette hops (late boil)
1/2 oz. Cascade hops (end of boil)
1 oz. Chinook hops (dryhopped)
White California or East Coast, Wyeast American or German Ale Yeast
 INSTRUCTIONS:
(A "Classic" House Recipe Worth Repeating)
1. Steep grains in a mesh bag in 2 gallons of water while heating to boiling. Do not boil grains.
2. Remove grains and add malt extract. Stir to thoroughly dissolve, and bring to boiling.
3. Add 1/2 oz. Northern Brewer hops and begin timing a 45 minute boil. Boil gently and stir frequently to avoid scorching.
4. With 10 minutes remaining in the boil, add 1/2 oz. of Cascade hops.
5. Then add the Honey and stir to dissolve. Do not over cook honey by adding too early.
6. With 5 minutes remaining in the boil, add 2 ozs. of Willamette hops.
7. At the end of the 45 minute boil, add 1/2 oz. of Cascade hops.
8. Cool (as always we strongly recommend using a wort chiller) until temperature is below 80 degrees F before putting in fermenter, adding water to make 5 gallons total, and adding yeast. Be certain temperature of the mixture is 75 degrees or below. If you don't already have a Thermometer Strip on your fermenter, GET ONE !! They are only $2.95, and are one of the best tools you can have.
9. When fermentation slows (approximately 4 to 5 days into fermentation), add the Chinook hops. It is best to transfer the beer into another fermenter at this time but not required. If you are unfamiliar with this "dryhopping" or "secondary fermenting" technique, ask us and we will explain how really simple it is.
 NOTES:
For all grain brewers, substitute 10 lbs. of your preferred 2-row malted barley for the malt extract. Keep specialty grains as above. Mash at 155 degrees F for 1 hour. Sparge with 175 degree sparge water to keep grains from cooling and reducing your sparge efficiency. Add the 1/2 oz. of Northern Brewer hops at the beginning of a 60 minute boil, but keep all other hop addition times as indicated in the extract recipe.

* Using typical grocery store honey is NOT recommended in any fermentation. It will likely result in a harsh finish in your beverage, and possibly an unpleasant alcohol flavor as well. That is why we offer raw local mild honey with all of its nutrients intact, at about 1/2 the price charged at most "whole" food and "natural" food stores. We could make more profit if we sold you cheap honey at a high price, but that's not the way we do business!
